Savory Thai Stew

I love coconut curries and I’ve been looking for a coconut milk-based dish that I can easily concoct at home. I saw this recipe and photo in VegNews Magazine last month and decided to give it a go. It was wonderful! Perfect for those cold winter nights or a light but flavor-filled lunch!

Serves 6

What You Need:

1 tablespoon olive oil
1 medium onion, quartered and thinly sliced
4 to 6 cloves garlic, minced
3 medium sweet potatoes, peeled and diced
3 cups water
1 medium green or red bell pepper, cut into narrow strips
1-1/2 cups frozen green beans
1/2 teaspoon red or green curry paste
1 tablespoon natural granulated sugar
2 teaspoons minced fresh ginger
2 stalks lemongrass
One 13.5-ounce can light coconut milk
2 tablespoons natural peanut butter
Salt to taste

What You Do:

1. In a soup pot over medium-low heat, heat the oil. Add onion and sauté until translucent. Add garlic and continue to sauté until both are golden. Add sweet potatoes and water. Bring to a rapid simmer, then lower the heat. Cover and simmer for 10 minutes, or until the sweet potatoes are about half done.

2. Add bell pepper, green beans, curry paste, sugar, and ginger. Cut each lemongrass stalk into 3 or 4 pieces, and bruise by making long cuts throughout with a sharp knife. Stir into the soup pot. Simmer stew for 10 minutes longer.

3. Stir in the coconut milk, peanut butter, and salt. Return to a simmer, then cook over very low heat for another 10 minutes or until all the vegetables are tender and the flavors are well integrated. Remove lemongrass pieces. Taste to adjust seasonings, and serve at once.

Zpizza is the home of the Berkeley Vegan, which we order, oh, once a month or so! It’s so darn good with it’s fired-baked thin crust and soy cheese goodness. Toppings include veggie burger crumbles, zucchini, tomatoes, red onions, bell peppers, and vegan cheese. If you’re in an area with a Zpizza make sure and order this pie! I believe that they will also sub vegan cheese for their other pies, too. Zpizza uses only the finest organic ingredients and fresh produce for a healthier pizza experience that tastes great!

Candy Cane Joe Joe’s!

The Holidays are great. You know what else is great? Candy Cane Joe Joe’s! Candy Cane Joe Joe’s are a seasonal staple at Trader Joe’s and are amazingness in your mouth. Just take my word for it. This oreo-like cookie with a peppermint center tastes similar to a Thin Mint but is vegan and has real crushed candy canes mixed into the filling. YERM!!! If you don’t live near a Trader Joe’s then find someone who does and order a box ASAP.

Pumpkin Muffins

Happy November!! Think pumpkins are just for Halloween? Think again! I absolutely love the smell of pumpkin and spice and to prolong the spirit of Fall and usher in the month of Thanksgiving I made some delicious pumpkin muffins. To make these quick and easy  muffins I purchased a box of Trader Joe’s Pumpkin Bread and Muffin Mix and a can of their Organic Pumpkin. Instead of eggs I used Ener-G Egg Replacer and Canola Oil for the oil. I only used half the oil that was called for on the box’s recipe since I added in the organic pumpkin. I also felt that it made them somewhat healthier ;). I added walnut bits before I popped them in the oven coz’ I loves me some crunch!

Final Thoughts? Yummy, moist, pumpkin-spiced muffins that went amazingly well with a hot cup of coffee or tea. Easy Peasy!

I love pumpkin and I love Trader Joe’s!

GOOD Vegan Cheese, the holy grail!

So while shopping at Whole Foods the other day Cesar and I discovered that they offered Vegan pizza in their deli. And not just any Vegan pizza, but BBQ Vegan pizza! Drool. I thought to myself as we contemplated ordering a few slices, what Vegan cheese might these fine folks at Whole Foods be working with? I mean I’ve tried just about every non-dairy cheese regularly available at health food stores, well at least the ones that melt. The only success I have ever had was with Follow Your Heart ‘mozzarella’ and while it was decent (see past posts using FYH) it just didn’t make me go running for the hills shouting the praises of a long sought-after legitimate cheese substitute. Ya dig? But boy, was this pizza delicious and the Vegan cheese they used actually melted and stretched like dairy cheese would.


Upon further investigation we found that they are using Daiya Vegan Cheese and are basically testing it to see how the customers like it. Ummm….sign me up please, and while you’re at it ORDER it for regular stocking at the store! The other amazing thing about Daiya is that it’s not even soy-based like so many other Vegan cheeses. The main ingredient is “cassava”, which comes from the cassava root. Some of the other ingredients are arrowroot and pea protein. So not only is it great for those who wish to avoid dairy, but it also looks to be safe for those with aversions to soy. I can’t wait until this product becomes more readily available, and I would be thrilled to see it as an option on the menu at some non-Veg eateries. Ok, maybe that’s a little far-fetched, but hey, a girl can dream can’t she? Vegan cheesy, melty, stretchy dreams…..
